What is the difference between raw and typical commercial honey?
Raw honey is directly taken from the bee hive and never processed or pasteurized. The smooth, clear honey found on most store shelves has been heated. Heating honey kills yeast cells and prevent fermentation. Fermented honey does not pose health threat, but does effect the taste. While pasteurization lengths shelf life, it also partials breaks down vitamins and minerals within the honey. Raw honey will granulate, but pasteurized honey will crystalize.
